Finishing off artwork

This might be a simple question to those that have attended an art class, but I haven't since 1979, and that was a 1 semester class... pen and inks, with watercolor washes and sometimes some oil... how should I finish? Spray varnish, paint clear coat, fixative, etc?

I just started drawing again this past February, and have a few hundred finished pieces, all on heavy cold pressed water color paper. They look ok when in a clear bag and behind a mat, but outside of bag the paper just look dull.
