varnish on wood

I find myself in a bit of a varnishing quandary - I just finished an acrylic painting done on an oak panel. I primed all the areas I painted but wanted the wood grain to show through in the negative space. Now I'm a bit puzzled as to what varnish would be best and if I need to seal the bare wood. Or would an isolation coat before varnishing do the trick? (To make matter more fun it has some gold leaf as well - but I don't mind varnishing around that if necessary...)
