Using varnish

Hello I have started to paint after years of . I paint with acrylics using gesso as my white in my paintings . The first picture of the giraffe has gesso used the elephant was white acrylic . I like the gesso it gives less shine and will carry on with gesso . But what varnish would you recommend I want to enhance colours but not shine . I have a liquified matte medium gel can I use that on top of my paintings .

I meant I have Liquitex matte medium gel if I add that on top of the paintings will it reduce shine

If it were me I would just use a water based polyurethane. You can get it in what ever sheen you desire.
